It’s getting warmer outside and this means cooler lunches are in order!
Today I made a Kale salad…
- Sliced beets
- Sliced carrots
- Goat cheese crumbles
- Sliced thin corn beef
- Kalamata olives
Mix everything together and top off with a champagne vinaigrette and voile!
The hearty mix of fruits and veggies helps this salad stay with you all day long. It’s one of my go-to’s as an easy take to work lunch. Try it and let me know what you think!
