I have a hard time eating in the mornings, but these pancakes are fabulous! I make them the night before I want to eat them and I top them with sugar free syrup and peanut butter. You can also just eat them cold from the fridge on the go!

Ingredients 

Makes 1 Serving

1/8 cup nonfat Greek yogurt

1/8 cup low-fat cottage cheese

1/8 cup vanilla or chocolate whey protein powder

1/8 cup coconut flour

1/8 cup old-fashioned oats

1 egg white

1/8 cup unsweetened almond milk

½ tsp vanilla extract

Nonfat cooking spray

1 tsp yacon syrup

Once batter is blended, stir in:

1/8 cup berry mix (fresh or frozen)

Directions

1. Blend pancake ingredients in a blender. Once blended, stir in berry mix.

2. Heat a pan over medium heat, then lightly coat with cooking spray or a little olive oil.

3. Pour desired amount of batter into hot pan. (you can make small pancakes or , a large one.)

4. Flip when bubbles form in the batter, or when one side is golden.
