Today I played housewife.

And it was fun… 🙂

Here’s a little rundown of dinner.

1. Brown Sugar Balsamic Pork Chops

For the Marinade:

  • 1 teaspoon rubbed sage
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 clove garlic, minced
  • ½ cup water
  • ½ cup brown sugar
  • 1 tablespoon cornstarch
  • ¼ cup balsamic vinegar
  • ½ cup cold water
  • 2 tablespoons soy sauce
  • 1/2 cup champagne or wine
For the Glaze:
  • ½ cup brown sugar
  • 1 tablespoon cornstarch
  • ¼ cup balsamic vinegar
  • ½ cup cold water
  • 2 tablespoons soy sauce

I cooked the pork chops in the marinade on 325 for 3 hours and then at 375 for 40 minutes. I then shut off the oven and let them finish cooking for 20 minutes with the glaze on them.

2. Cucumber Salad

  • 1 tablespoon garlic powder
  • 1 tablespoon lime juice
  • 1 tablespoon lemon juice
  • 1 tablespoon crushed red pepper
  • 1 teaspoon sea salt, or to taste
  • black pepper to taste
  • 3 tablespoons olive oil (I used cranberry-pear)
  • 2 cucumbers, very finely sliced
  • 3 radishes diced
  • 2 green onions diced
  • handful of cherry tomatoes
  • can of red beans

Combine and enjoy!

3. Strawberry Vanilla Cups

  • Strawberries (1-2 per cup or more if you like)
  • Package of Sugar-Free instant pudding
  • Graham Crackers

Combine in a wine glass and voile!
